Last week I had/made the time to go to one of our local vegetarian stores (really! these folks have an establishment that never carries meat, fish or egg products) and stock up on all sort of goodies. I usually do my shopping at the Food Lion and it is a treat to make a special trip to someplace else. (Gosh, I wonder what THAT says about my life?)
One of my favorite things is Twin Oaks Tofu. This tofu is super firm and browns up nicely in a stir fry. We are fortunate to have these folks in our area. I also picked up some Sunergia Soyfoods pesto tofu – yum!
New to me were Field Roast Vegan Sausages. I tried the Apple and Sage over the weekend fried up with some apples and it was delicious. I have the Chipotle Sausage on my menu this week, although I am not sure yet how I will fix it.
I have soup planned this week, but I expect it won’t be long before the weather warms up and my soup day becomes salad day. After all the snow we had this winter, spring can not come soon enough!
Monday – Pasta with Pesto and Pesto Tofu
Tuesday – Field Roast Chipotle Sausage
Wednesday -”Chicken” Soup with Matzo Balls (never got to this last week)
Thursday – Sloppy Joes and Three Bean Salad
Friday – Pizza or Leftovers
