Menu Plan Monday January 11

Menu Plan Monday once again!

Is anyone besides me already worn out with the cold? I could really use a two month long hot flash about now. :-)

I am making some of my husband’s favorites this week. I have been fortunate to find a man who is very easy to please.

Monday – Tofu hotdogs and Sauerkraut on Buns

Tuesday – Spinach Pie with Phyllo Dough

Wednesday – Lentil Soup

Thursday – Macaroni and Cheese

Friday – Pizza

It seems that after cooking for four days we always have plenty of leftovers to last through the weekend. I guess that’s what happens when you are cooking for only three people that are somewhat watching their calories. There’s a part of me that still thinks I am cooking for Coxey’s Army. :-)

P.S. I worked in a kosher kitchen for a while and made my Spinach Pie with firm Tofu instead of Feta Cheese so that it could be served with Chicken. This could also be a vegan alternative when you use a binder that replaces eggs. Be sure to add a bit of extra salt to get the feta cheese salty flavor.

    Wow!! Great Menu. I never thought that you could use tofu as a cheese substitute.

    This sounds terrific! I used to make these great Greek stuffed pastries, and I would make some with spinach and feta and some with crumbled, seasoned tofu. The dough, of course, was made with yogurt, so they weren’t vegan, but boy was that tofu filling delicious when I seasoned it well!
